"Oh My...it's Tomato Pie!"

Who does not love a sun kissed "real" tomato just plucked from the garden. I've tried many different recipes for fresh tomato pie and have chosen the following.

Simple but delicious Tomato Pie

4 ripe medium sized tomatoes, sliced and drained

1 C grated mozzarella

2 TBS minced basil

1 C grated sharp cheddar

1/2 C chopped green onion

1 C Duke’s mayonnaise

1 (9 inch) pre-baked deep dish pie shell

Set oven to 350 degrees
Slice and drain tomatoes well (on paper towels)
Combine 6 next ingredients in bowl. Add salt and pepper to taste if needed.
Start layering with the cheese/mayo mixture first to cover bottom of pie shell.
Add layer of sliced and drained tomatoes, then cheese/mayo, and finish with tomatoes.
Bake for 45 minutes or until firm and done. These can also be made into individual tarts.

If you prefer to have a tomato sandwich meal, we did so recently at one of our frequent "Sunday Suppers" at the Roberts farm in Hillsborough. Larry Roberts has a favorite memory of a tomato sandwich being on Merita or Sunbeam bread and compromised to have Duke's Mayonnaise along with his choice of Miracle Whip. There were some other accompaniments including lettuce and bacon. Also served was a watermelon salad, grilled shrimp and a fresh blueberry pie, sweet tea and a cold white wine. This and good company made for a perfect evening!
